I was home alone today and bored, so I decided to try a recipe that a friend recently posted. It calls for frozen spinach but fresh is always best, IMO. So, first I had to cook down the spinach with a little olive oil. And down did it go. Whoa.





I subbed half and half for heavy cream, and had to double the cheese sauce part because I overshot the frozen to fresh ratio on the spinach. Oops.







I had a little cream cheese leftover, so I dressed it up with red chili pepper jelly and crackers and had a few while waiting for the cheese to smooth. Not a bad decision, at all. This jelly is my jam.





Conclusion: pretty damn good. Very cheesy, and easy, too. I would definitely make this again.
